Mario Chamaya Rafael, a dedicated coffee producer in Santa Rosa, Huabal, Northern Peru, cultivates his 3-hectare farm at an elevation of 1900 meters. His meticulous approach yields a large quantity of washed coffee, primarily featuring Caturra varietals in both red and yellow. After harvesting, the coffee cherries rest for a day, allowing flavours to develop. A 48-hour fermentation period enhances their distinct characteristics, followed by careful washing and 10 days of drying. Mario’s commitment to quality and sustainability shines through in every cup, representing the unique Huabal region in Northern Peru
