Mario Chamaya Rafael, a dedicated coffee producer in Santa Rosa, Huabal, Northern Peru, cultivates his 3-hectare farm at an elevation of 1900 meters. His meticulous approach yields a large quantity of washed coffee, primarily featuring Caturra varietals
in both red and yellow. After harvesting, the coffee cherries rest for a day, allowing flavours to develop. A 48-hour fermentation period enhances their distinct characteristics, followed by careful washing and 10 days of drying.
