This pulped natural coffee features notes of blackberry, apple, dark chocolate, and toffee almond. The process starts with harvesting cherries, which are then sorted by ripeness and pulped to remove all mucilage. Next, the parchment coffee is dried on patios and turned regularly for 7 - 10 days to ensure even drying.
Produced at Fazenda Pinhal by the Gabarra Teixeira Family, this lot comes from a 914‑hectare farm near San Antonio de Ampoaro in Sul de Minas. While a third of the land is planted with coffee, the remainder is maintained as a natural reserve, eucalyptus forest, and pasture for cattle.
The family also operates a bird sanctuary on the property, rehabilitating and caring for injured birds while collaborating with local universities on research and environmental welfare initiatives.
